Sitting outside getting some Vitamin D with a cool breeze is so refreshing. Why not enjoy a strawberry spinach salad with a tangy lemon honey poppyseed vinaigrette while you’re at it? I love summer salads. This salad is one of my all-time favorites. It’s great to have at summer BBQs or for a weeknight dinner. It’s so fresh, quick, and easy! 🍓

Strawberry Spinach Salad

Ingredients
  

For Lemon Poppyseed Vinaigrette:
  • 1/4 cup olive oil
  • 3 Tbsp red wine vinegar
  • 2 Tbsp honey
  • 2 tsp poppy seeds
For Salad:
  • 4 oz baby spinach
  • 2 cups fresh strawberries, halved
  • 1/3 cup slivered almonds
  • 1 cup feta cheese, crumbled

Method
 

For the Lemon Poppyseed Vinaigrette:
  1. To make vinaigrette, in a medium bowl add olive oil, vinegar, honey and poppy seeds. Stir until well combined. Set aside.
For Salad:
  1. In a large bowl combine the spinach, strawberries and almonds.
  2. Serve salad immediately. Pour dressing on salad on plate. Garnish with feta cheese crumbles, as desired.

Notes

Note: Make sure not to pour all the dressing on the salad at once, it will get soggy quickly. Keep dressing in a separate container.

  • Any hearty dish (chicken, pork or beef)
