Lemon and dill are a fantastic food pairing, especially when they are the main attraction of a dish. This savory chicken is served with the best lemon dill sauce. It’s made in under 30 minutes. Add a side of broccoli (or another veggie) and rice of your choice. So satisfying, and tasty.

Ingredients
  

  • 2 lbs chicken thighs, skin-on
  • Kosher salt and ground pepper, to taste
  • 5 1/2 Tbsp all-purpose flour, divided Reserve 1 1/2 tablespoons of flour.
  • 1 Tbsp olive oil
  • 1 Tbsp unsalted butter
  • 1 cup chicken broth
  • 2 Tbsp fresh lemon juice
  • 1 1/2 Tbsp fresh dill, chopped, divided Reserve 1/2 tablespoon of fresh dill for garnish.

Instructions
 

  • Prepare chicken by seasoning both sides with kosher salt and ground pepper. Then, dredge 4 tablesppons of flour in a smaller bowl until well coated.
  • In a large skillet, heat olive oil and butter together over medium heat. Working in batches, transfer chicken to skillet. Cook chicken until golden brown and cooked through (reaching an internal temperature of 165ºF), about 5-8 minutes on each side depending on thickness of chicken. Reduce heat. Set chicken aside.
  • Whisk in remaining flour until slightly browned, about 2 minutes. Add chicken broth and lemon juice. Bring to a boil, then reduce heat until slightly thickened, about 3 minutes. Stir in fresh dill. Season with kosher salt and ground pepper to taste.
  • Return chicken to skillet. Top chicken with sauce. Garnish with more fresh dill, as desired.
  • Serve immediately.

Notes

Suggested Sides:
  • Rice (chicken flavored or white rice)
  • Broccoli or Asparagus (or other vegetable of choice)
