March is one of my favorite months of the year. It’s loaded with dinner and dessert ideas for St. Patrick’s Day and Pi Day too. On Pi Day, I like to indulge in some delicious pies, especially these mini pies. These mini tarts have a graham cracker crust with a creamy key lime filling topped whipped cream and lime slice. It’s the perfect dessert for any party or St. Patrick’s Day event. Easy and quick.

Ingredients
  

For the Crust:

  • 1 pkg (of 6) mini graham cracker crusts

For the Filling:

  • 2 egg whites, beaten
  • 1 (14 oz) can sweetened condensed milk
  • 1/3 cup lime juice
  • 1 tsp lime zest
  • 3 Tbsp greek yogurt
  • 1 drop green food dye

For Garnish:

  • whipped cream
  • fresh lime, cut in 1/2, for garnish

Instructions
 

For the Crust:

  • Preheat oven to 350°F. Prepare six mini graham cracker crusts. Set aside.

For the Filling:

  • In a separate bowl, combine egg whites, sweetened condensed milk, lime juice, lime zest, greek yogurt and green food dye. Using an electric hand mixer, mix well until creamy and smooth.
  • Remove crust from oven. Fill crusts with filling, about 3/4 full. Transfer back to oven. Bake at 350°F for an additional 12-15 minutes or until filling is set.
  • Remove tarts from oven. Refrigerate for about 30 minutes to finish setting up.

For Garnish:

  • Remove from refrigerator. Top with whipped cream and a fresh lime slice.  
  • Serve immediately.

Notes

Makes six mini pies.
