Hasselback Chicken Caprese
This quick and easy caprese is packed with flavor that sends you on an Italian food journey as you taste your way through a world of fresh ingredients. It comes together in less than 30 minutes.
Ingredients
- 6 skinless chicken breasts
- 2 Tbsp olive oil
- Kosher salt and ground pepper, to taste
- 1 tsp Italian seasoning
- 1/2 lb fresh mozzarella, sliced
- 1 cup baby spinach
- 1 tomato, sliced into half moons
- 1 cup fresh basil leaves
- Balsamic glaze, for garnish
Instructions
- Preheat oven to 400°F. Prepare baking sheet. Set aside.
- Place chicken breasts on cutting board. Cut about 4-5 slits horizontally on along each chicken breast. Make sure you don’t cut through the chicken completely. Transfer to baking sheet.
- Season chicken with kosher salt, ground pepper and Italian seasoning. Drizzle a little olive oil over chicken.
- In no particular order, stuff chicken with mozzarella, spinach and tomatoes. Alternate and shift these ingredients between chicken breasts to create more variation. Place baking sheet into oven.
- Bake at 400°F for 25 minutes until chicken is cooked through (at 165°F internal temperature) and no more pink showing.
- Remove from oven. Garnish with shredded fresh basil and drizzle balsamic glaze in a horizontal motion over the top.
- Serve immediately.
