Happy National Shrimp Scampi Day! Celebrate with a healthy and delicious version of shrimp scampi with a Cajun twist to it. Replace your noodles with zucchini noodles. Comes together in less than 30 minutes. Being a fan of shrimp, this is definitely a part of my regular dinner rotation.

Ingredients
  

  • 2 Tbsp unsalted butter
  • 1 lb medium shrimp, cooked and deveined
  • 3 cloves garlic, minced
  • 1 tsp Cajun seasoning, to taste
  • 1/4 cup chicken broth
  • 2 tsp fresh lemon juice
  • Kosher salt and ground pepper, to taste
  • 1 1/2 lb (4 medium) zucchini, spiralized
  • 2 Tbsp Parmesan, grated

Instructions
 

  • Wash zucchini. Transfer to spiralizer. Spiralize zucchini noodles into a small bowl. Set aside.
  • Melt butter in a large skillet on medium high heat. Add shrimp, garlic and Cajun seasoning; season with salt and pepper to taste. Cook for 2-3 minutes until shrimp turns pink. Stirring occasionally.
  • Stir in chicken broth and lemon juice. Bring to a simmer. Gradually add the zucchini noodles until well blended.
  • Serve immediately, garnish with Parmesan and fresh parsley.
