Hasselback Chicken Caprese

This quick and easy caprese is packed with flavor that sends you on an Italian food journey as you taste your way through a world of fresh ingredients. It comes together in less than 30 minutes.

Ingredients
  

  • 6 skinless chicken breasts
  • 2 Tbsp olive oil
  • Kosher salt and ground pepper, to taste
  • 1 tsp Italian seasoning
  • 1/2 lb fresh mozzarella, sliced
  • 1 cup baby spinach
  • 1 tomato, sliced into half moons
  • 1 cup fresh basil leaves
  • Balsamic glaze, for garnish

Instructions
 

  • Preheat oven to 400°F. Prepare baking sheet. Set aside.
  • Place chicken breasts on cutting board. Cut about 4-5 slits horizontally on along each chicken breast. Make sure you don’t cut through the chicken completely. Transfer to baking sheet.
  • Season chicken with kosher salt, ground pepper and Italian seasoning. Drizzle a little olive oil over chicken.
  • In no particular order, stuff chicken with mozzarella, spinach and tomatoes. Alternate and shift these ingredients between chicken breasts to create more variation. Place baking sheet into oven.
  • Bake at 400°F for 25 minutes until chicken is cooked through (at 165°F internal temperature) and no more pink showing.
  • Remove from oven. Garnish with shredded fresh basil and drizzle balsamic glaze in a horizontal motion over the top.
  • Serve immediately.
