Easy Deluxe Taco Soup

It’s taco night (or Taco Tuesday). Make it a taco night with this filling and rich beef taco soup. It’s like making tacos but easier. This soup is a simple way to enjoy favorite Mexican flavors all in one pot, which makes it for a quick and easy clean-up. Top your soup with sour cream, cilantro, green onions, avocados, or corn chips. Healthy, hearty, and delicious! Make it a taco (soup) night! 

Mise en Place Ingredients

Start with preparing your mise en place ingredient station. Wash and chop all produce and herbs (onions, green bell pepper, red bell pepper, cilantro, and green onions). Mince the garlic (or use the jarred kind to save some time). Drain and rinse the beans. Put frozen corn in a cup. Pour canned tomatoes into a bowl. Place ground beef on a separate plate. Set aside your ingredients in bowls, containers, or plates until ready to start cooking.

Making the Soup

Making this soup is super simple. This soup is a great alternative option for taco night (or Taco Tuesday), and it’s less hassle having to clean things up.

Prepare a large stockpot and eat olive oil over medium-high heat. Add the remaining ingredients to the stockpot. Stir until combined and season to taste. Cover and simmer the soup for 30 minutes. Yep, it’s that easy! That’s all you do. You can rest easy and get dinner on the table within 30 minutes. Easy taco (soup) night!

Spend more time in the evening relaxing than fussing over what to make for dinner. This soup helps solve that dinner question.

Garnish with cheese, sour cream, green onions, cilantro, avocado, limes, and corn chips, as desired. Serve warm, and enjoy!

Recipe Tips:

  • Prepare all produce and herbs beforehand (aka mise en place). This method helps make all recipes go faster.
  • Rinsing the beans helps reduce the amount of salt in the soup.
  • Leftovers can be stored in the refrigerator for 3-4 days.
