Deluxe Taco Soup

It's taco night (or Taco Tuesday). Make it a taco night with this filling and rich beef taco soup. It's like making tacos but easier. This soup is a simple way to enjoy favorite Mexican flavors all in one pot, which makes it for a quick and easy clean-up. Top your soup with sour cream, cilantro, green onions, avocados, or corn chips. Healthy, hearty, and delicious! Make it a taco (soup) night!

Ingredients
  

  • 1 Tbsp olive oil
  • 1 lb lean ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups beef stock
  • 1 (28 oz) can diced tomatoes
  • 2 Tbsp taco seasoning
  • 1 (14.5 oz) can pinto beans, drained and rinsed
  • 1 (14.5 oz) can black beans, drained and rinsed
  • 1 1/2 cups frozen corn
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 Tbsp fresh lime juice
  • 1 tsp kosher salt, plus more to season to taste
  • 1/3 cup cilantro, chopped, for garnish at the end

For Garnish & Soup Toppings:

  • sharp cheddar cheese
  • sour cream
  • green onions
  • corn chips (i.e. Fritos)
  • lime
  • avocado

Instructions
 

  • Wash and cut all produce and herbs. Set aside.
  • In a large stockpot, heat olive oil over medium-high heat. Add lean ground beef and onions. Cook until beef is crumbled and browned and onions are translucent, about 4-5 minutes.
  • Add beef stock, diced tomatoes, taco seasoning, pinto beans, black beans, corn, bell peppers, fresh lime juice and 1 tsp of kosher salt.
  • Bring to boil. Cover and let simmer for 30 minutes. Season with more kosher salt to taste.

For Garnish & Soup Toppings:

  • Serve immediately warm with cheese, sour cream, and other toppings, as desired.
