It's taco night (or Taco Tuesday). Make it a taco night with this filling and rich beef taco soup. It's like making tacos but easier. This soup is a simple way to enjoy favorite Mexican flavors all in one pot, which makes it for a quick and easy clean-up. Top your soup with sour cream, cilantro, green onions, avocados, or corn chips. Healthy, hearty, and delicious! Make it a taco (soup) night!

- 1 Tbsp olive oil
- 1 lb lean ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups beef stock
- 1 (28 oz) can diced tomatoes
- 2 Tbsp taco seasoning
- 1 (14.5 oz) can pinto beans, drained and rinsed
- 1 (14.5 oz) can black beans, drained and rinsed
- 1 1/2 cups frozen corn
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 Tbsp fresh lime juice
- 1 tsp kosher salt, plus more to season to taste
- 1/3 cup cilantro, chopped, for garnish at the end
For Garnish & Soup Toppings:
- sharp cheddar cheese
- sour cream
- green onions
- corn chips (i.e. Fritos)
- lime
- avocado
Wash and cut all produce and herbs. Set aside.
In a large stockpot, heat olive oil over medium-high heat. Add lean ground beef and onions. Cook until beef is crumbled and browned and onions are translucent, about 4-5 minutes.
Add beef stock, diced tomatoes, taco seasoning, pinto beans, black beans, corn, bell peppers, fresh lime juice and 1 tsp of kosher salt.
Bring to boil. Cover and let simmer for 30 minutes. Season with more kosher salt to taste.
