Bring a taste of Texas to your kitchen. Breakfast tacos for breakfast, lunch or even dinner. Yum! These tacos are loaded with eggs, fresh basil, tomatoes, spinach, almonds and salsa. Quick and easy. Ideal for after a workout.

These tacos are loaded with eggs, fresh basil, tomatoes, spinach, almonds and salsa. Quick and easy. Ideal for after a workout.

Ingredients
  

  • coconut oil spray
  • 2 corn tortillas
  • 2 eggs
  • 1 cup baby spinach
  • 1 Tbsp fresh basil, chopped
  • 1/4 cup grape tomatoes, chopped
  • 2 Tbsp slivered almonds
  • 1/4 cup salsa or hot sauce

Instructions
 

  • In a small bowl, whisk together eggs. Wash spinach, basil and tomatoes. Chop vegetables and set aside.
  • In a small skillet, spray pan with non-stick coconut oil spray. Pour eggs into skillet. Cook on medium-heat for 2 minutes.
  • Add spinach, basil and tomatoes. Fold into egg. Cook for another minute. Do not cook too long.
  • Warm corn tortillas on burner or microwave (30-45 seconds).
  • Serve immediately. Top corn tortillas with omelette mixture. Garnish with almonds and salsa or hot sauce, if desired.
