Zucchini Cajun Shrimp Scampi
Happy National Shrimp Scampi Day! Celebrate with a healthy and delicious version of shrimp scampi with a Cajun twist to it. Replace your noodles with zucchini noodles. Comes together in less than 30 minutes. Being a fan of shrimp, this is definitely a part of my regular dinner rotation.
Ingredients
- 2 Tbsp unsalted butter
- 1 lb medium shrimp, cooked and deveined
- 3 cloves garlic, minced
- 1 tsp Cajun seasoning, to taste
- 1/4 cup chicken broth
- 2 tsp fresh lemon juice
- Kosher salt and ground pepper, to taste
- 1 1/2 lb (4 medium) zucchini, spiralized
- 2 Tbsp Parmesan, grated
Instructions
- Wash zucchini. Transfer to spiralizer. Spiralize zucchini noodles into a small bowl. Set aside.
- Melt butter in a large skillet on medium high heat. Add shrimp, garlic and Cajun seasoning; season with salt and pepper to taste. Cook for 2-3 minutes until shrimp turns pink. Stirring occasionally.
- Stir in chicken broth and lemon juice. Bring to a simmer. Gradually add the zucchini noodles until well blended.
- Serve immediately, garnish with Parmesan and fresh parsley.
