Watermelon, cucumbers, and feta cheese are the main attractions of this refreshing salad. This salad is quick, fresh, and very flavorful. Take it up a notch by topping it with a lime vinaigrette and basil or mint as a garnish. It’s ideal for any summer BBQ or party.

Tip: Since watermelon and cucumbers are high in water, it’s best to eat this the
same day as it was prepared. If you have leftovers, store in a
tight-lid container in the refrigerator for up to two days.

Ingredients
  

For the Lime Vinaigrette:
  • 1/4 cup olive oil
  • 1 1/2 tsp kosher salt
  • 3/4 tsp ground pepper
  • 1 Tbsp fresh lime juice
For the Salad:
  • 1/2 watermelon, seedless
  • 1 English cucumber, chopped
  • 1 cup Feta cheese, crumbled
  • 1 cup red onion, chopped
For Garnish:
  • Fresh mint or basil, chopped, for garnish (optional) Select one herb for garnish.
  • Kosher salt, to taste

Method
 

For Lime Vinaigrette:
  1. In a small bowl, whisk together olive oil, kosher salt, pepper and lime juice. Set aside.
For Salad:
  1. In a large bowl, combine watermelon, cucumber, feta cheese and red onion. Tossed until well combined.
For Garnish:
  1. When ready to serve, pour vinaigrette dressing over salad. Toss until coated. Garnish with mint or basil, if desired. Season with a pinch of Kosher salt, to taste.
  2. Serve immediately.
