Ravioli Soup
It’s National Ravioli Day! Enjoy the day with a quick and easy Italian inspired soup with ravioli to warm soul. This soup includes spinach, basil and cheese. Very comforting and comes together in 30 minutes.
Ingredients
- 1 tsp olive oil
- 2 cloves garlic, minced
- 1/2 onion, diced
- 2 carrots, diced
- 2 celery, diced
- 3 Tbsp tomato paste
- Kosher salt and ground pepper, to taste
- 8 cups chicken broth
- 1 pkg frozen ravioli
- 2 tsp dried basil
- 1 tsp dried thyme
- 1 cup Parmesan cheese
- 2 cups spinach, chopped
- 1/2 cup fresh parsley, chopped
Instructions
- In a large stock pot, heat olive oil over medium-high heat. Cook garlic, onions and carrots, about 4-5 minutes. Add celery, tomato paste. Season with kosher salt and ground pepper to taste.
- Stir in chicken broth and 1 cup water. Bring to boil. Add cheese ravioli and cook according to package instructions.
- Add basil, thyme, Parmesan, spinach and parsley. Heat until well combined.
- Serve immediately. Garnish with more cheese, as desired.
