Method
- In a large stock pot, heat olive oil over medium-high heat. Cook garlic, onions and carrots, about 4-5 minutes. Add celery, tomato paste. Season with kosher salt and ground pepper to taste.
- Stir in chicken broth and 1 cup water. Bring to boil. Add cheese ravioli and cook according to package instructions.
- Add basil, thyme, Parmesan, spinach and parsley. Heat until well combined.
- Serve immediately. Garnish with more cheese, as desired.
