It's National Ravioli Day! Enjoy the day with a quick and easy Italian inspired soup with ravioli to warm soul. This soup includes spinach, basil and cheese. Very comforting and comes together in 30 minutes.

- 1 tsp olive oil
- 2 cloves garlic, minced
- 1/2 onion, diced
- 2 carrots, diced
- 2 celery, diced
- 3 Tbsp tomato paste
- Kosher salt and ground pepper, to taste
- 8 cups chicken broth
- 1 pkg frozen ravioli
- 2 tsp dried basil
- 1 tsp dried thyme
- 1 cup Parmesan cheese
- 2 cups spinach, chopped
- 1/2 cup fresh parsley, chopped
In a large stock pot, heat olive oil over medium-high heat. Cook garlic, onions and carrots, about 4-5 minutes. Add celery, tomato paste. Season with kosher salt and ground pepper to taste.
Stir in chicken broth and 1 cup water. Bring to boil. Add cheese ravioli and cook according to package instructions.
Add basil, thyme, Parmesan, spinach and parsley. Heat until well combined.
Serve immediately. Garnish with more cheese, as desired.
