It’s not National Peanut Butter Day without a classic peanut butter Rice Krispie bar recipe. Inspired by the lunchtime treat from our elementary school cafeteria and an amazing cooking mentor. These bars are nostalgically delicious.

Peanut Butter Rice Krispie Bars
Inspired by the lunchtime treat from our elementary school cafeteria and an amazing cooking mentor. These bars are nostalgically delicious.
Ingredients
- 1/2 cup sugar
- 1/2 cup light corn syrup
- 1/2 cup peanut butter
- 3 cups Rice Krispie cereal
- 3 cups semisweet chocolate chips, melted
Instructions
- Prepare a 8 X 8 pan. Add parchment paper and coat it with non-stick spray. Set aside.
- In a small microwave-safe bowl, combine sugar and light corn syrup. Microwave for about 1 1/2-2 minutes, stirring every 30 seconds. Don’t let it boil.
- Add 1/2 cup peanut butter to corn syrup mixture. Pour syrup mixture over 3 cups of Rice Krispie cereal. Mix together and pour into the prepared pan. Let cool for about 3 minutes to setup.
- In another bowl, melt chocolate chips in microwave for about 30 seconds. Don’t burn chocolate chips.
- Cut peanut butter bars while warm. Drizzle melted chocolate chips over top. Serve immediately.
