Ingredients
  

  • 2 Tbsp vegetable oil
  • 1 1/2 lb stir-fry beef or flank beef steak, cut into strips
  • 6 cloves garlic, minced
  • 2 Tbsp ground ginger
  • 20 oz fresh (or frozen) broccoli, steamed

For Beef Sauce:

  • 1/4 cup soy sauce, low sodium
  • 1/2 cup water
  • 2 tsp brown sugar
  • 2 tsp sesame oil
  • 1 tsp oyster sauce
  • 1 1/2 cups beef broth

For Slurry:

  • 2 Tbsp cornstarch
  • 1 Tbsp water

For Serving & Garnish:

  • Basmati or jasmine rice, for serving
  • sesame seeds, for garnish

Instructions
 

  • Add vegetable oil to pressure cooker and select Saute to heat oil. Cut beef into small strips. Transfer to pressure cooker. Add garlic and ginger. Saute until beef has been browned.
  • For the sauce, add soy sauce, water, brown sugar, sesame oil, oyster sauce and beef broth to the beef mixture. Stir well. Turn off Saute setting.
  • Put lid on pressure cooker. Set spout to Sealing. Select Pressure Cook/Manual and set time for 8 minutes on high pressure. Pressure cooker will take up to 5 minutes to pressurize.
  • While the beef mixture is cooking, steam the broccoli. In a stock pot, heat water with a little salt. Bring to a boil. Add fresh or frozen broccoli. Steam broccoli for up to 5-6 minutes.*
  • Prepare your basmati or jasmine rice according to package directions. Set aside.
  • After beef mixture is done, do a Quick-Release according to manufacturer's instructions. Cancel the Pressure Cook/Manual setting. Select Saute setting.

For the Slurry:

  • In a small bowl, combine cornstarch and water. Stir together. Add slurry to beef mixture and stir beef mixture until sauce thickens. If sauce isn't thick enough, add more one tablespoon of cornstarch with water combined together before adding to beef mixture.
  • Stir in steamed broccoli and mix into beef mixture.

For Serving & Garnish:

  • Serve beef and broccoli over rice. Garnish with sesame seeds, if desired.

Notes

* You can also purchase frozen broccoli in microwave ready bags. Broccoli can be steamed this way too.
