Classic Lemon Bars

I’ve been compiling some recipes with my grandma recently. It made me feel happy and nostalgic. It inspired me to make these classic, tangy and sweet angel-dusted lemon bars. These were a big hit, especially at work. I made them for a co-worker’s birthday. I’m not much of a baker but these turned out amazing.

Classic Lemon Bars

These classic, tangy and sweet angel-dusted lemon bars. These are a big hit at parties. They are easy to make.

Ingredients
  

For the Crust:

  • 1 3/4 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1/4 cup lemon zest
  • 1 cup unsalted butter, softened at room temperature
  • Powdered sugar, for garnish
  • Fresh lemons, cut into 1/4 slices, for garnish

For Lemon Filling:

  • 1 1/2 cups sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 1 cup fresh lemon juice (about two lemons)
  • 1 tsp pure vanilla extract

Instructions
 

For the Crust:

  • Preheat oven to 350°F. Line a 9 X 13 baking pan with parchment paper. Coat with nonstick cooking spray. Set aside.
  • In a large mixing bowl, combine flour, cornstarch, sugar, salt, lemon zest and butter. Using a hand mixer, mix until well combined. Press mixture into the bottom of the lined baking pan.
  • Place into oven. Bake at 350°F for 15-20 minutes or until top is set and edges are golden brown. Remove from oven and set aside.

For Lemon Filling:

  • In a large mixing bowl, whisk together sugar and flour. Add eggs and lemon juice. Mix until well combined. Pour filling over crust. Return to oven.
  • Bake at 350°F for 18-22 minutes or until lemon filling is set. Remove from oven. Transfer to wire rack to cool for 1 hour. Then cover tightly and refrigerate for at least two hours.
  • Before serving, sift powdered sugar on top of bars. Cut lemons into 1/4 slices. Place slices on top of bars. Slices bars into squares.
  • Serve immediately.
