Comfort food recipes are family-dinner musts throughout the week. They are among my favorite meals to add the dinner rotation. Quick and easy. This poppyseed chicken is simple, yet it can be ritzy. It can be served over rice or mashed potatoes. Add a side of broccoli or side salad to make it complete. This meal is ideal for a quick weeknight meal. Winner, winner chicken dinner!
Ritzy Poppyseed Chicken
This poppyseed chicken is simple, yet it can be ritzy. It can be served over rice or mashed potatoes. Add a side of broccoli or side salad to make it complete. This meal is ideal for a quick weeknight meal. Winner, winner chicken dinner!
Ingredients
- 1 (10.5 oz) can cream of chicken soup
- 2 cups sour cream
- 1 Tbsp poppyseeds
- 2 cups Ritz crackers, crushed
- 1/2 cup unsalted butter, melted
- 4-6 boneless chicken breasts
- Fresh parsley, chopped, for garnish
- Kosher salt and ground pepper, to taste
Instructions
- Preheat oven to 400°F. Prepare 9 X 13 baking dish and coat with nonstick spray.
- Place crackers in a ziploc bag. Crush crackers until they form crumbs. In a small bowl, combine crushed crackers and melted butter.
- In a small bowl, combine cream of chicken soup, sour cream and poppyseeds. Set aside.
- Place chicken in baking dish. Top with sauce and crushed crackers. Season with kosher salt and ground pepper.
- Place into oven. Bake at 400ºF for 35-40 minutes or until chicken reaches 160ºF internal temperature.
- Remove from oven. Serve chicken over rice with a vegetable side of your choice. Garnish with fresh parsley. Season with kosher salt and ground pepper, to taste.
