Ritzy Poppyseed Chicken

This poppyseed chicken is simple, yet it can be ritzy. It can be served over rice or mashed potatoes. Add a side of broccoli or side salad to make it complete. This meal is ideal for a quick weeknight meal. Winner, winner chicken dinner!

Ingredients
  

  • 1 (10.5 oz) can cream of chicken soup
  • 2 cups sour cream
  • 1 Tbsp poppyseeds
  • 2 cups Ritz crackers, crushed
  • 1/2 cup unsalted butter, melted
  • 4-6 boneless chicken breasts
  • Fresh parsley, chopped, for garnish
  • Kosher salt and ground pepper, to taste

Instructions
 

  • Preheat oven to 400°F. Prepare 9 X 13 baking dish and coat with nonstick spray.
  • Place crackers in a ziploc bag. Crush crackers until they form crumbs. In a small bowl, combine crushed crackers and melted butter.
  • In a small bowl, combine cream of chicken soup, sour cream and poppyseeds. Set aside.
  • Place chicken in baking dish. Top with sauce and crushed crackers. Season with kosher salt and ground pepper.
  • Place into oven. Bake at 400ºF for 35-40 minutes or until chicken reaches 160ºF internal temperature.
  • Remove from oven. Serve chicken over rice with a vegetable side of your choice. Garnish with fresh parsley. Season with kosher salt and ground pepper, to taste.
