Method
- Prepare lime gelatin according to the package instructions. Fill mugs with lime gelatin, leaving about 1/2 cup from the top.
- Place mugs in the refrigerator for 4 hours or more to allow gelatin to setup.
For the Lemon Cream Topping:
- After lime gelatin has setup, remove from refrigerator. Set aside.
- In a sauce pan, add fresh lemon juice and unflavored gelatin. Heat mixture for about 30 seconds. Let stand for about a minute and cool down.
- Stir in sugar and bring to boil, about 1 minute. Stir lemon gelatin mixture. Turn off heat and let cool.
- Add mixture to a medium bowl. Combine Greek yogurt and whipped cream. Whisk together mixture until it starts to become smooth and creamy.
- Transfer lemon cream mixture to a plastic or piping bag. If mixture is in a plastic bag, cut a small hole on the end of the bag.
- Pipe lemon cream mixture on top of each mug to look like foam. Place into refrigerator until ready to serve.
- Serve chilled.
Notes
* Three packages might be needed if you want to fill more than four mugs. Two packages of gelatin will be enough for 4 mugs of this size pictured.
