Broccoli Macaroni & Cheese

Cheese lovers rejoice! This is the easiest and yummiest macaroni and cheese. It comes together in about 20-30 minutes. Comfort food at its finest with cheese galore and broccoli. Super yummy!

- 2 cups medium pasta shells
- 2 Tbsp unsalted butter
- 2 cloves garlic, minced
- 1/2 onion, chopped
- 2 Tbsp all-purpose flour
- 2 cups whole milk
- 1 cup half and half
- 1 tsp Dijon mustard
- 3 cups broccoli florets, chopped
- 2 cups sharp cheddar cheese, shredded
- Kosher salt and ground pepper, to taste
In a large stockpot, prepare pasta shells according to package instructions. Drain well. Set aside.
In a skillet, melt butter over medium-high heat. Add garlic and onion. Stirring frequently until fragrant, about 2 minutes. Do not burn.
Whisk in flour, about 1 minute. Gradually add whole milk, half & half and Dijon mustard until thickened, about 4 minutes. If sauce is too thick, add 1/2 cup (or more) of whole milk. Season with kosher salt and ground pepper, to taste.
Add pasta, broccoli and sharp cheddar cheese. Stir until well combined, about 2-3 minutes.
