Stuffed Zucchini Pizzas
Zucchini is in season. Bring on the delicious zucchini recipes. This one is no exception. Perfect flavor combination of pizza and zucchini. It makes for a tasty lunch or dinner. Quick, healthy and easy peasy!
Ingredients
- 4 large zucchini, halved lengthwise
- 2 Tbsp olive oil
- 1 (16 oz) jar pizza sauce
- 1/2 lb ground turkey
- 2 tsp Italian seasoning
- 1 tsp dried oregano
- 1 clove garlic, minced
- Kosher salt & ground pepper, to taste
- 2 cups mozzarella cheese, shredded
- 1 cup mini pepperoni
- 1 cup Italian sausage crumbles
- Fresh basil, chopped, for garnish
Instructions
- Preheat oven to 350°F. Slice zucchini lengthwise into halves. Scoop out the insides into a large skillet.
- Over medium heat, add olive oil, zucchini, ground turkey, Italian seasoning, oregano, garlic. Season with kosher salt and ground pepper to taste. Saute until tender, about 6-8 minutes. Then pour pizza sauce into zucchini mixture. Stir well.
- On a baking sheet, cover with aluminum foil. Place sliced zucchini halves on to baking sheet. Spoon on sauce into zucchini. Top with mozzarella cheese, mini pepperoni and Italian sausage. Place into oven.
- Bake for 15 minutes at 350°F for 15 minutes until zucchini is tender and cheese melted.
- Garnish with fresh chopped basil. Serve immediately.
