Mini Italian Meatball Subs

This yummy, tender, melt-in-your-mouth Italian meatball sandwich is so delicious. Simple and quick to assemble. Add a side salad for the ideal Italian busy weeknight/weekend meal. 🇮🇹
Ingredients
For Meatballs:
- 8 oz ground beef
- 8 oz ground pork
- 1 egg, beaten
- 1/4 cup Panko breadcrumbs
- 1/4 cup Parmesan cheese, shredded
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp allspice
- Pinch of nutmeg
- Kosher salt and ground pepper, to taste
- 2 Tbsp olive oil
- 2 cups marinara sauce
For Dinner Rolls:
- 6 (3 in) dinner rolls, split in 1/2
- 1 1/2 cups mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, shredded
- dried parsley, for garnish
Instructions
For Meatballs:
- In a large bowl, combine beef, pork, egg, Panko breadcrumbs, Parmesan, garlic powder, onion powder, allspice and nutmeg. Season with Kosher salt and ground pepper. Stir until well combined. Roll mixture into meatballs, forming up to 20.
- In a large stockpot, heat olive oil over medium-high heat. Add meatballs and cook for 4 minutes until well browned. After meatballs are cooked through, stir in marinara sauce.
For Dinner Rolls:
- Preheat oven to broil. Prepare a baking sheet and line it with aluminum foil.
- Place halved dinner rolls on baking sheet. Put meatballs in rolls, about 3 per roll. Top with mozzarella and Parmesan cheeses.
- Place into oven to broil for about 3-4 minutes, until cheeses have melted.
- Serve immediately. Garnish with dried parsley. Add a side salad to complete meal.
