Hej from Stockholm, Sweden! This week, I’m on a fun Scandinavian cruise with a friend. Today we are in Sweden. Sweden has amazing history, architecture and food. Especially those Swedish meatballs and lingonberries. They are irresistible. These tender meatballs are very easy and they are made in your pressure cooker. Top your meatballs with this rich and creamy gravy. Utsökt (delicious in Swedish)! 🇸🇪

Ingredients
  

For Meatballs:

  • 1 lb ground beef
  • 1 lb ground pork
  • 1/2 cup Panko breadcrumbs
  • 1/3 cup milk
  • 2 egg yolks
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1/2 tsp dried thyme
  • 1/4 tsp ground all spice
  • 1/4 tsp ground nutmeg
  • Kosher salt and ground pepper, to taste
  • 1 Tbsp olive oil

For Gravy:

  • 2 Tbsp all-purpose flour
  • 2 cups beef broth
  • 1/2 cup sour cream
  • Kosher salt and ground pepper, to taste

For Garnish:

  • 2 Tbsp fresh dill, chopped
  • 2 Tbsp fresh parsley, chopped

For Pasta:

  • Egg noodles
  • 1 tsp salt

Instructions
 

For Meatballs:

  • In a large bowl, combine ground beef, ground pork, breadcrumbs, milk, egg yolks, onion, garlic, thyme, allspice and nutmeg. Season with kosher salt and ground pepper, to taste. Mix together until well combined. Roll mixture into 3/4 inch meatballs, forming up to 25-30 balls. Set aside on a plate.
  • Working in about two batches. Add olive oil. Place meatballs in Instant Pot and set to high saute setting. Cook meatballs on all sides until browned, about 4 minutes. Transfer to a paper towel-lined plate.

For Gravy:

  • After working with meatballs, whisk in flower until lightly browned, about 1 minute. Add beef broth and season with kosher salt and ground pepper, to taste.
  • Return meatballs to pressure cooker. Select Manual setting, adjust pressure to high and set time for 8 minutes. Make sure spout is set to "Sealed". After time is done, do a Quick-Release according to manufacturer's instructions.
  • Pull out meatballs and set aside. Select high saute setting, simmer until sauce has thickened for about 4 minutes. Stir in sour cream and season with kosher salt and ground pepper.

For Pasta:

  • Cook egg noodles in boiled water with salt according to package instructions.
  • Drain and set aside.
  • Serve immediately with meatballs and gravy over egg noodles. Garnish with fresh dill and parsley, if desired.
