Everyone likes a good old fashioned low country Cajun shrimp boil. It includes shrimp, sausage, potatoes and corn. This hearty meal will easily feed a crowd. It comes together in the pressure cooker in about 6-7 minutes.

Everyone likes a good old fashioned low country Cajun shrimp boil. It includes shrimp, sausage, potatoes and corn. This hearty meal will easily feed a crowd. It comes together in the pressure cooker in about 6-7 minutes.

Ingredients
  

  • 1 1/2 lb baby red potatoes
  • 1 (12.8 oz) pkg andouille sausage, sliced
  • 1/2 onion, chopped
  • 4 tsp Cajun seasoning, divided
  • 3 ears corn, halved
  • 1 (16 oz) apple juice
  • 1 1/2 lb medium shrimp
  • 1/4 cup unsalted butter
  • 3 cloves garlic, minced
  • 2 Tbsp fresh parsley, chopped
  • 1 lemon, cut into wedge pieces

Method
 

  1. Prepare ingredients. Slice sausage. Chop onions and corn.
  2. Place red potatoes, sausage, onion, and 3 teaspoons Cajun seasoning into Instant Pot. Stir until well combined. Top with corn and apple juice.
  3. Select manual setting. Select "Manual" setting", adjust pressure to high and set time for 5 minutes. Set spout to "Sealing". After done cooking, do a "Quick-Release" according to manufacturer's directions.
  4. Add shrimp. Put lid back on and select the "Manual" setting. Adjust pressure to high and set time for 1 minute. Set spout again to "Sealing". After done cooking, do another "Quick-Release".
  5. In a small skillet, melt butter over medium heat. Add garlic and remaining 1 teaspoon Cajun seasoning. Stir and combine for 1-2 minutes.
  6. Serve shrimp boil mixture immediately. Drizzle butter and garnish with fresh parsley and lemon.
