Blueberry Cheesecake Parfait
Time for dessert! This decadent blueberry no bake cheesecake parfait is layered with blueberry pie filling, graham crackers and cream cheese. Absolutely delicious and very easy.
Ingredients
- 1 cup heavy cream
- 1 (8 oz) pkg cream cheese at room temperature
- 1/4 cup sugar
- 1 Tbsp lemon juice
- 1 tsp vanilla extract
- 1 (20 oz) can blueberry pie filling
- Graham cracker crumbles
- Whipped topping
Instructions
- In a large bowl, add heavy cream. Using an electric hand mixer, mix until stiff peaks form.
- In a separate bowl, mix and beat cream cheese. Then add heavy cream mixture, sugar, lemon juice and vanilla. Mix together until smooth and well blended.
- Fold in 1/3 of the whipped topping to lighten it, add remaining whipped topping. Gently fold everything together until light and fluffy.
- Using 3-4 glasses, pour filling into glasses and layer with blueberry pie filling. Store in fridge for 2 hours.
- Serve chilled. See instructions below on how to assemble parfaits.
Parfait Assembling Instructions
- Layer vanilla pudding mixture. Add second layer of blueberry pie filling.
- Repeat until almost to the top.
- Dollop more blueberry pie filling topping.
- Add whipped topping on top.
- Garnish with graham cracker crumbs.
