This crispy chicken parmesan is topped with marinara sauce, fresh mozzarella and parsley. Add a side of roasted zucchini and yellow squash to make it complete. It’s quick, tasty and healthy! Baked Chicken Parmesan and Zucchini Squash

Ingredients
For the Chicken Parmesan:
- 4 boneless chicken breasts
- 1 cup Panko breadcrumbs
- 1/2 cup Parmesan cheese, shredded
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1/2 tsp ground pepper
- 1 large egg
- 2 Tbsp olive oil
For the Roasted Squash:
- 2 medium zucchini, sliced
- 2 yellow squash, sliced
- 2 Tbsp olive oil
- Kosher salt and ground pepper
For Topping & Garnish:
- 1/2 cup marinara sauce
- 1/2 cup mozzarella cheese, shredded
- Fresh parsley, chopped, for garnish
Instructions
For the Chicken Parmesan:
- Preheat oven to 400°F. Prepare a baking sheet. Set aside.
- In a medium bowl, combine Panko breadcrumbs, Parmesan, Italian seasoning, garlic powder and ground pepper. Mix together. Gradually add olive oil. Toss until well combined and moist.
- In a separate small bowl, add egg and lightly beat. Set aside.
- Dredge chicken breasts in egg. Transfer to breadcrumb mixture. Press mixture to chicken to make sure it sticks. Transfer to baking sheet.
For the Roasted Squash:
- Slice zucchini and yellow squash. Place slices into a ziploc bag. Add 2 Tablespoons olive oil. Seal bag, coat zucchini and yellow squash with olive oil.
- Transfer zucchini and yellow squash to baking sheet. Spread squash around the chicken breasts evenly. Season with Kosher salt and ground pepper, to taste.
For Topping & Garnish:
- Place baking sheet into oven. Bake at 400°F for 15-17 minutes or until chicken reaches an internal temperature of 160°F.
- Remove from oven. Change oven to Broil on low.
- Pour marinara sauce over chicken breasts. Add fresh mozzarella over marinara sauce. Return to oven. Broil on low for 2 minutes until cheese is melted.
- Serve immediately. Garnish with fresh chopped parsley, if desired.
