Pork chops and apples are a delicious flavor combination. I had an amazing pork chop with apples, blue cheese and asparagus at The Garden Restaurant in Salt Lake recently. It inspired me to make a version you can easily make a home. It’s quick, easy and flavorful.

Ingredients
  

For the Pork Chops & Asparagus:

  • 2 Tbsp unsalted butter
  • 4 (8 oz) pork chops, bone-in (about 1-inch thick)
  • 1 Tbsp dried sage
  • Kosher salt and ground pepper, to taste
  • 16 oz asparagus, trimmed
  • 2 Tbsp olive oil
  • 3 cloves garlic, minced

For the Apples:

  • 2 Tbsp unsalted butter
  • 2 green apples, sliced and not peeled
  • 2 Tbsp light brown sugar
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 4 Tbsp maple syrup

Instructions
 

For the Pork Chops & Asparagus:

  • Preheat oven to 400°F. Prepare baking sheet and coat it with nonstick spray.
  • In a large skillet, melt butter over medium-high heat. Rub both sides of pork chops with dried sage, Kosher salt and ground pepper, to taste. Add to skillet. Sear both sides for about 3-4 minutes.
  • Place pork chops and asparagus on baking sheet. Drizzle olive oil and garlic, season with kosher salt and ground pepper over asparagus.
  • Place into oven and bake at 400°F for about 13-14 minutes. Make sure meat reaches the internal temperature of 140°F.

For the Apples:

  • In the large skillet, add more butter and melt over medium-high heat. Add apples, light brown sugar, cinnamon, nutmeg and maple syrup. Cook until apples soften and sauce thickens, about 4-5 minutes.
  • Serve pork chops over mashed potatoes and asparagus. Season with more ground pepper.
