Method
For the Crust:
- Preheat oven at 450ºF. Prepare a baking sheet or pizza pan. Coat with olive oil or nonstick spray. Set aside.
- Sprinkle a flat surface with cornmeal. Roll out pizza into a 12-inch diameter round. Carefully transfer dough to baking sheet or pizza pan. Set aside.
For the White Sauce:
- In a microwave-safe bowl, melt butter and then transfer to a small bowl. In the small bowl, combine butter, heavy cream, cream cheese, dried basil and oregano. Using a hand mixer, mix well until creamy and smooth.
- Stir in Parmesan cheese and garlic powder. Mix well, about 2-3 minutes.
- Spread sauce over pizza dough. Sprinkle mozzarella cheese over sauce. Set aside.
For the Toppings:
- In a medium skillet, heat 2 tablespoons olive oil over medium-high heat. Season chicken with Kosher salt and pepper. Cut into bite-size pieces. Transfer to skillet and cook until well cooked through, about 3-4 minutes. Place cooked chicken on a separate plate. Set aside.
- Heat remaining 1 tablespoon olive oil in same skillet. Add spinach until wilted, about 2-3 minutes.
- Spread diced chicken, spinach and bacon bits over crust. Add more mozzarella cheese, if desired.
- Place into oven and bake at 450ºF for 15-20 minutes or until crust is golden brown.
- Serve immediately.
