- 2 (3 oz) pkgs apricot gelatin* may use peach or orange if apricot isn't available
For Lemon Cream Foam Topping:
- 1/3 cup fresh lemon juice
- 1/2 tsp unflavored gelatin
- 1/2 cup sugar
- 1 (5.3 oz) container plain Greek yogurt
- 1 (8 oz) container whipped cream
Prepare apricot gelatin according to the package instructions. Fill mugs with apricot gelatin, leaving about 1/2 cup from the top.
Place mugs in the refrigerator for 4 hours or more to allow gelatin to setup.
For Lemon Cream Foam Topping:
After apricot gelatin has setup, remove from refrigerator. Set aside.
In a sauce pan, add fresh lemon juice and unflavored gelatin. Heat mixture for about 30 seconds. Let stand for about a minute and cool down.
Stir in sugar and bring to boil, about 1 minute. Stir lemon gelatin mixture. Turn off heat and let cool.
Add mixture to a medium bowl. Combine plain Greek yogurt and whipped cream. Whisk together mixture until it starts to become smooth and creamy.
Transfer lemon cream foam mixture to a plastic or piping bag. If mixture is in a plastic bag, cut a small hole on the end of the bag.
Pipe lemon cream mixture on top of each mug to look like foam. Place into refrigerator until ready to serve.
Serve chilled.
*Three packages might be needed if you want to fill more than four mugs. Two packages of gelatin will be enough for 4 mugs of this size pictured.
