Preheat oven to 325ºF. Prepare a baking sheet, line with parchment paper and lightly coat with nonstick spray. Set aside.
In a medium bowl, sift together flour, baking soda and salt. Set dry ingredients aside.
In another bowl, cream together melted butter, brown sugar, honey and sugar with an electric mixer (or by hand) until well combined, about 2 minutes.
Add vanilla, egg, egg yolk and mix together until creamy. Then, add sifted dry ingredient mixture, mix until just blended.
Gently fold in chocolate chips. Using a cookie scoop or wooden spoon. Place about 1/4 cup (they are big cookies) cookie dough on prepared baking sheet. Form small towers with dough. This will allow cookies to form the ideal shape as they bake. Each cookie should be 3 inches apart.
Place into oven. Bake at 325ºF for 10-14 minutes, until edges are golden brown. If your cookies are smaller in size, bake for 7-9 minutes. Do not over bake.
Remove from oven. Allow cookies to cool on cooling racks for about 10 minutes. The center may seem doughy, but allow cookies to cool completely. They will finish baking as they cool.
Serve with milk and enjoy.
