For Strawberry Glaze:
- In a saucepan, stir together sugar and cornstarch over medium-high heat, until well combined, about 4-5 minutes.
- Add water until mixture thickens. Stirring frequently
- Add strawberry gelatin and whisk until smooth, about 4 minutes.
- Stir in fresh strawberries and make sure they are well coated.
For Ice Cream Dessert:
- In a gallon sized ziploc bag, pour cookies in bag and crush them into crumbles. Set aside.
- Prepare a plate, spread crumbled cookies on bottom. Add ice cream sandwich on top.
- Top with strawberry glaze mixture. Garnish with fresh whipped topping. Sprinkle more crumbled cookies and more fresh strawberries.
