Lazy Summer Dessert with Strawberry Glaze

Time for dessert! This dessert is extremely easy it's almost effortless. Simply take an ice cream sandwich, top it with crumbled cookies, homemade strawberry glaze and garnish with whipped topping and fresh strawberries. Yassss please!

Ingredients
  

For Strawberry Glaze:
  • 3/4 cup sugar
  • 2 Tbsp cornstarch
  • 1 cup cold water
  • 1 (3 oz) pkg strawberry gelatin
  • 2 cups fresh strawberries, halved
For Ice Cream Dessert:
  • 2 cups Oreo cookies, crumbled
  • 1 ice cream sandwich
  • whipped topping, for garnish

Method
 

For Strawberry Glaze:
  1. In a saucepan, stir together sugar and cornstarch over medium-high heat, until well combined, about 4-5 minutes.
  2. Add water until mixture thickens. Stirring frequently
  3. Add strawberry gelatin and whisk until smooth, about 4 minutes.
  4. Stir in fresh strawberries and make sure they are well coated.
For Ice Cream Dessert:
  1. In a gallon sized ziploc bag, pour cookies in bag and crush them into crumbles. Set aside.
  2. Prepare a plate, spread crumbled cookies on bottom. Add ice cream sandwich on top.
  3. Top with strawberry glaze mixture. Garnish with fresh whipped topping. Sprinkle more crumbled cookies and more fresh strawberries.
