Irish Pub Shepherd’s Pie

This classic shepherd's pie has a tomato and beef filling mixed with a mirepoix (meer-pwah) fresh vegetables (onions, carrots, and celery), thyme, and parsley. Then, it's topped with creamy sour cream and thyme mashed potatoes, and mozzarella cheese. It's finished broiled in it the oven to add a nice browning effect.

For Mashed Potatoes:*
- 2 Golden Yukon potatoes, chopped
- Kosher salt and ground pepper
- 2 Tbsp unsalted butter
- 1/2 cup milk
- 2 Tbsp sour cream
- 1 tsp fresh thyme, chopped
- 1 cup mozzarella cheese, shredded
For Beef Mixture:
- 1 Tbsp olive oil
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 lb ground beef
- 1 tsp garlic powder
- 2 tsp fresh thyme, chopped
- 2 Tbsp tomato paste
- 1 Tbsp flour
- 1 cup beef broth
- Kosher salt and ground pepper, to taste
For Mashed Potatoes:*
Wash and dice all the potatoes. Peel potato skin off, if desired. In a medium stockpot, add potatoes to water with kosher salt. Boil potatoes until are tender, about 15-20 minutes. Drain and return to pot.
Mash potatoes with a masher. Add sour cream, butter, fresh thyme and milk. Season with kosher salt and ground pepper. Mix together. Set aside.
For Beef Mixture:
Preheat the broiler on high on the oven. Wash and prepare all produce.
In a large oven-proof skillet, heat olive oil on medium-high heat. Combine carrots, celery, onion and garlic. Season with kosher salt and ground pepper. Cook until veggies are tender, about 7 minutes. Add garlic powder and fresh thyme, cool until fragrant about 1 minute.
Add ground beef to skillet. Cook, breaking up beef into pieces and until browned, abou 4-6 minutes. Add tomato paste and flour. Stir thoroughly and cook for about 1 minute.
Add beef both and cook until beef mixture thickens, about 2 minutes. Season with kosher salt and pepper.
Top beef mixture with mashed potatoes, leaving a slight gap on the edges. Top with mozzarella cheese. Place into oven and broil for 3 minutes. Be sure to watch your skillet to avoid burning top.
Serve immediately.
* To save cooking time for potatoes, feel free to use instant potato flakes in place of boiling potatoes, if desired.
