Method
For Mashed Potatoes:*
- Wash and dice all the potatoes. Peel potato skin off, if desired. In a medium stockpot, add potatoes to water with kosher salt. Boil potatoes until are tender, about 15-20 minutes. Drain and return to pot.
- Mash potatoes with a masher. Add sour cream, butter, fresh thyme and milk. Season with kosher salt and ground pepper. Mix together. Set aside.
For Beef Mixture:
- Preheat the broiler on high on the oven. Wash and prepare all produce.
- In a large oven-proof skillet, heat olive oil on medium-high heat. Combine carrots, celery, onion and garlic. Season with kosher salt and ground pepper. Cook until veggies are tender, about 7 minutes. Add garlic powder and fresh thyme, cool until fragrant about 1 minute.
- Add ground beef to skillet. Cook, breaking up beef into pieces and until browned, abou 4-6 minutes. Add tomato paste and flour. Stir thoroughly and cook for about 1 minute.
- Add beef both and cook until beef mixture thickens, about 2 minutes. Season with kosher salt and pepper.
- Top beef mixture with mashed potatoes, leaving a slight gap on the edges. Top with mozzarella cheese. Place into oven and broil for 3 minutes. Be sure to watch your skillet to avoid burning top.
- Serve immediately.
Notes
* To save cooking time for potatoes, feel free to use instant potato flakes in place of boiling potatoes, if desired.
