Easy Chicken Cordon Bleu

This healthy chicken cordon bleu is quick, simple, and ideal for any weeknight meal. These juicy and crispy chicken breasts are filled with deli ham and shredded Swiss cheese. Add a side salad with fresh tomatoes to make it complete. This meal is super easy. You’ll want to add this to your dinner rotation, and the family will be requesting seconds.

- 2 chicken breasts, skinless, boneless
- 1/2 tsp kosher salt
- 1/2 tsp ground pepper
- 1/2 tsp Italian seasoning
- 4 slices deli ham, cooked
- 1 cup Swiss cheese, shredded Substitution: Italian Blend shredded cheese
- 1 cup flour
- 2 eggs, whisked
- 1 cup Panko breadcrumbs
- 1/2 cup olive oil (or avocado oil)
- fresh parsley, for garnish
Preheat oven to 375ºF. Prepare oven-proof skillet.
On a cutting board, cover chicken breasts with plastic wrap. Using a meat mallet (or rolling pin), pound the chicken breasts to 1/2 to 1/4 inch thickness.
Season flatten chicken with kosher salt, ground pepper, and Italian seasoning. Layer slices of cooked deli ham and 1/2 cup of Swiss cheese on to each chicken breast.
Roll each chicken breast (burrito style) and seal the edges. Use toothpicks if you need to secure the edges more.
Transfer chicken to dredging station. Dredge chicken in flour, egg wash and then breadcrumbs. Shake off any excess flour and breadcrumbs.
Transfer to oven-proof skillet. Heat olive oil over medium-high. Cook chicken for 3 minutes on both sides. Place skillet into oven. Bake at 375ºF for 18-20 minutes. Remove from oven. Make sure chicken has an internal temperature of 165ºF and it should be done. Allow chicken to cool for 5 minutes.
Serve immediately. Garnish with fresh parsley and add more Italian seasoning.
