Method
- Preheat oven to 375ºF. Prepare oven-proof skillet.
- On a cutting board, cover chicken breasts with plastic wrap. Using a meat mallet (or rolling pin), pound the chicken breasts to 1/2 to 1/4 inch thickness.
- Season flatten chicken with kosher salt, ground pepper, and Italian seasoning. Layer slices of cooked deli ham and 1/2 cup of Swiss cheese on to each chicken breast.
- Roll each chicken breast (burrito style) and seal the edges. Use toothpicks if you need to secure the edges more.
- Transfer chicken to dredging station. Dredge chicken in flour, egg wash and then breadcrumbs. Shake off any excess flour and breadcrumbs.
- Transfer to oven-proof skillet. Heat olive oil over medium-high. Cook chicken for 3 minutes on both sides. Place skillet into oven. Bake at 375ºF for 18-20 minutes. Remove from oven. Make sure chicken has an internal temperature of 165ºF and it should be done. Allow chicken to cool for 5 minutes.
- Serve immediately. Garnish with fresh parsley and add more Italian seasoning.
