Country Biscuits & Gravy Bake

There's nothing more comforting than having biscuits and gravy. This version combines everything all-in-one baking dish. It's easy peasy and only takes 20 minutes to bake. Serving this country sausage gravy over biscuits makes this the ideal breakfast.

For the Sausage Gravy:
- Coconut cooking spray
- 2 lb mild country pork sausage
- 3 Tbsp all-purpose flour
- 2 1/2 cups milk
- 1/2 tsp cayenne pepper
- Kosher salt and ground pepper, to taste
For the Biscuits:
- 2 (16 oz) pkg refrigerated buttermilk biscuits
- 2 Tbsp unsalted butter, melted
- Kosher salt and ground pepper, to taste
- 2 Tbsp fresh chives, chopped
For the Sausage Gravy:
Pre-heat oven to 375°F and prepare a 9 X 13 baking pan. Coat with coconut nonstick cooking spray. Set aside.
In a large skillet over medium-high heat, cook pork sausage. Crumble and cook until it's been browned and cooked all the way through, about 6 minutes.
Gradually add in flour and cook an additional 1 minute. Pour in milk. Stir until well combined. Season with cayenne pepper, kosher salt and ground pepper, to taste. Bring to boil. Reduce heat and simmer until it has thickened, about 5 minutes. Set aside.
For the Biscuits:
For the biscuits, cut them into quarter sizes. Add half of them to the bottom of the prepared baking pan. Pour sausage gravy over biscuits. Top with remaining quarter-sized biscuits.
Brush biscuits with melted butter. Season with kosher salt and ground pepper. Place into oven. Bake at 375°F for 20 minutes.
Remove from oven. Serve immediately. Garnish with fresh chives, if desired.
