Cheeseburger Meatloaf

It's National Cheeseburger Day! Celebrate with this super tasty Cheeseburger Meatloaf. This meatloaf is stuffed with sharp cheddar cheese and it's topped with a tangy tomato-mustard glaze. It's delicious and melts in your mouth. Definitely a good family dinner staple to add to the meal rotation.

For Meatloaf:
- 1/2 cup Panko breadcrumbs
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 3/4 tsp salt
- 1 egg
- 1/2 cup onion, chopped
- 1 cup sharp cheddar cheese, shredded
- 1 lb lean ground beef
- Dried parsley, for garnish
For Tomato-Mustard Glaze:
- 1/2 cup ketchup
- 1 Tbsp brown sugar
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
For Meatloaf:
Preheat oven to 350ºF. Prepare a bread pan and coat with nonstick spray. Set aside.
In a small bowl, mix together breadcrumbs, smoked paprika, garlic powder, and salt. Set aside. In a separate small bowl, whisk egg lightly.
In a medium bowl, add ground beef, breadcrumb mixture, whisked egg, onion and cheese. Use your hands to combine all ingredients together.
Place beef mixture in bread pan and shape into a rectangle, about 1.5" thick.
For Tomato-Mustard Glaze:
In a separate bowl, combine ketchup, brown sugar, Dijon mustard and Worcestershire sauce. Spread glaze over the top of beef.
Place into oven. Bake at 350ºF for 53-55 minutes or until internal temperature reaches 160ºF.
Remove meatloaf from oven. Allow to cool for 5 minutes. Slice into pieces.
Serve meatloaf with a side of green beans and mashed potatoes. Garnish with dried parsley, if desired.
