Cuisine Mexican
- 1 1/2 lb carne asada flank steak, cut into 1/2" pieces
- 3 Tbsp soy sauce
- 3 Tbsp fresh lime juice (about 2 limes)
- 2 Tbsp olive oil, divided
- 3 cloves garlic, minced
- 2 tsp chili powder
- 1 tsp roasted ground cumin
- 1 tsp oregano
- 10 mini corn tortillas
- 1/2 cup red onion, diced
- pico de gallo, for garnish
- fresh cilantro, chopped, for garnish
- fresh lime slices, for extra lime flavor
Cut carne asada flank steak into 1/2-inch pieces. Put them into a gallon-sized freezer bag. Set aside.
In a small bowl, mix together soy sauce, fresh lime juice, 1 tablespoon olive oil, garlic, chili powder, cumin, and oregano. Pour into same freezer bag with flank steak. Seal bag and coat the steak with marinade. Put in refrigerator to marinate for about 2-4 hours.
In a small skillet, heat remaining 1 tablespoon olive oil over medium-heat. Transfer marinated steak to skillet. Cook until browned and marinade has decreased, about 6-7 minutes.
Take corn tortillas and warm them. If desired you can place them on the burner to add some extra crispiness.
Serve steak immediately in warmed tortillas. Garnish with pico de gallo, red onion, cilantro and fresh lime.
