Method
- Pre-heat the oven to 375°F. Lightly oil a 9 x 9 baking dish with nonstick spray. Set aside.
For Meatballs:
- To make meatballs, combine beef, pork, egg, Panko, Parmesan, garlic powder, onion powder, allspice and nutmeg. Season with salt and pepper. Using wooden spoon, stir until well blended.
- Roll meatball mixture into 1 1/2 inch balls, forming up to 20 meatballs.
- In large stock pot, on medium heat heat olive oil. Add meatballs. Cook meatballs on all sides until well browned about 2-3 minutes. Transfer to plate with paper towels. Set aside.
For Pasta:
- In another pot, boil water and salt. Cook pasta according to directions until al dente. Drain well and stir in marinara sauce.
- Add pasta to prepared dish. Top with meatballs and sprinkle with mozzarella. Place into oven. Bake at 375°F for about 15-20 minutes.
- Serve immediately. Garnish with fresh parsley.
